The Everything Bun

The third attempt at perfecting the Flax Meal Bun.

The first batch of Flax Meal Buns were messed-up as I used coconut oil, they came out tasting too much like coconut…but this mistake led to batch #3.

Batch #2 I used olive oil, added oregano, garlic powder and caraway seeds because I miss eating rye bread in a deli. I made a few sandwiches with Batch #2 while B1 sat neglected in the fridge. Because I was brought up to not waste food I wasn’t going to throw away B1 buns. So I decided to toast them and top with a suitable topping that would match the coconut taste.

I toasted one and topped with peanut butter. This reminded me so much like eating a bagel that I toasted another and spread cream cheese on it. Hot damn! Close to a bagel except that stupid coconut flavor. Next day I toasted a bun from B2, sprinkled some poppy seeds, sesame seeds and minced onions on it and this was even closer like an Everything Bagel.

This led to the Garlic Flax Meal Buns above that I topped with Everything Bagel toppings before baking. They’re cooling and I’ll store for tomorrow since I’m hitting my max calories for the day. Tomorrow I’ll buy some sun-dried tomatoes, chop that up and mix into some cream cheese for a spread onto a toasted B3 bun.

Isn’t that a thing of beauty! Bagel/bread cravings shattered!

One last pic since I finally got my sun-dried tomatoes. SDT and Cream Cheese on my toasted Everything Garlic Flax Buns. A bit much at a total net-carb of 5 g but way less than a plain 3" everthing bagel that would be 28g of net-carbs without any toppings.
