I pigged-out on those Pecans Delight so I made a new batch so I can send some to my folks on Oahu. I came up a little short on my Costco bag of pecans so I tossed in some Macadamia Nuts which are a bonus in this low carb treat. This batch did not disappoint with the sweet/salty candied glaze.
While I waited for the pecans/mac nuts to roast and cool I decided to make some Bulletproof Ice Cream. This is a super rich, creamy smooth, low carb, high fat chocolatey ice cream is one of the best I’ve had. Plus it has Coconut Oil, MCT Oil and raw organic cacao powder for a metabolism boost. Amazing ice cream and you feel energized after eating it instead of sleepy! Easily the best ice cream I’ve made so far.
