Did a bunch of home cooking over the weekend so I can have goodies for the week.
I’ve been wanting to do a copycat recipe of Popeye’s Durty Rice so I substitute Riced Cauliflower for real rice. Finally got around to doing it the past weekend and it came out great, only thing missing from the ingredient list was Celery Flakes. Might have to check the natural food stores for that one since two other main supermarkets here didn’t have it.
The coleslaw is not flashy but tasty since I won’t be eating any macaroni salad soon.
The Pulled Pork is the star and was made in the oven, it took forever to cook but came out nice and tender inside with carmelized bits on the exposed parts. Looked even better straight out of the oven after being pulled apart but this is a photo of it reheated.
The Carolina Mustard Sauce was something I made to offset the sweeter taste of the meat and it came out pretty good, the apple cider vinegar in it is a little strong, I may cut that back a little next time I experiment. It has the right amount of heat. Probably good on the meat in a sandwich too or spread on during a BBQ.
Candied Pecans (low-carb)
Yield: About 16 one-ounce servings
Oven Temp: 250ºF
1 Egg White
1 tsp. Cold Water
6 Drops EZ-Sweetz (or other sweetener) optional
1 Pound Raw Pecans
1 C. Just Like Sugar, tabletop
2 tsp. Cinnamon
1 tsp. Ground Ginger
1 tsp. Salt or Salt Substitute
Whisk together Egg White, Water and EZ-Sweetz into a froth in a big mixing bowl. Add Pecans and mix until well coated.
In a large Ziploc bag mix Just Like Sugar, Cinnamon, Ground Ginger and Salt. Mix these dry ingredients well then add the Pecans and shake until they are well coated.
Spread Pecans on a large cookie sheet lined with parchment paper. Bake at 250ºF for one hour. Stir Pecans every 15 minutes to break apart and so the wet parts dry.
Remove from oven, let cool before packing. The Candied Pecans will crisp when they cool.
Per 1 oz. serving: 205 Calories, 20g Fat, 4g Carbs, 2g Fiber, 3g Protein
Another low carb meal. This is supposed to be Sweet & Sour Spareribs but I just used boneless pork butt instead for easy eating. I cut back on the sweetener compared to the last time I made this and it was better. And coleslaw using Best Foods Mayonaise of course, accept no substitutes.
